Danzai noodles originated in Tainan. "Danzai" means carrying a pole in Hokkien Chinese. The noodle stall is sold along the street with a pole. The founder is Hong Yutou, a fisherman. Danzai noodles are made of oily noodles, boiled in bamboo nets, served in delicate small bowls, topped with minced meat, sometimes with a tail of shrimp or half a marinated egg.
