In the early Ming Dynasty, common people loved to eat Nanjing salted duck, and the emperor also loved it. It is said that Taizu Zhu Yuanzhang had "a roast duck in a solar eclipse". The imperial chefs in the palace tried their best to develop new ways to eat duck dishes to please the Lord Long Live, so they developed two kinds of roasted duck with skewers and roasted duck with stewed oven. Fork-roasted duck is represented by "Quanjude", while braised oven-roasted duck is most famously known as "Bianyifang".


Quanjude adopts the method of roasting in a hanging oven and does not open the duck. Only a small hole is made on the duck, the internal organs are taken out, and boiling water is poured into the belly of the duck, and then the small hole is tied up and hung on the fire to roast. This method not only prevents the duck from dehydration due to roasting, but also prevents the skin of the duck from being roasted soft. The roasted duck skin is very thin and crisp, which becomes the most delicious part of the roast duck. The hanging furnace has a furnace hole but no furnace door. It uses fruit wood such as jujube wood and pear wood as fuel, and uses an open flame. When the fruit wood is fired, there is no smoke, the bottom fire is strong, and the burning time is long. The roasted duck is plump in appearance, maroon in color, crispy in skin, charred on the outside and tender in the inside, with a fragrance of fruit wood, which tastes even more wonderful when tasted carefully. Strictly speaking, only this roasting method is called Peking duck.


The method of "steaming furnace" in Bianyifang is actually a kind of ground furnace. The body of the furnace is made of bricks, and the size is about one meter square. Its production method was first introduced to Beijing from the south. It is characterized by "the duck does not see an open fire". Because of the need to use a dark fire, high technology is required. The person in charge of the furnace must control the temperature in the furnace. If the temperature is too high, the duck will be burnt, otherwise the duck will not be cooked. Braised oven-roasted duck has a bright and crispy skin, white, tender meat and delicious taste. Stewing oven roast duck is the signature of Bianyifang, but the stewing oven for burning sorghum stalks has long been changed to an electric stewing oven. Nowadays, there are very few roast duck restaurants that use stewing ovens, and most roast duck restaurants use the Quanjude hanging oven roasting method. The braised oven-roasted duck tastes more tender, and the juice of the duck skin is obviously fuller and fuller. The fragrance of fruit and wood in the hanging oven roast duck seems to make people appreciate the wisdom of the "roasting" cooking method first mastered by human beings.


Dadong Roast Duck Restaurant (a little less famous than the above two, but also very delicious), is diagonally opposite the Jingguang Center. The dishes are very particular. They are really roasted with apple wood, and the taste and texture are undeniable.

The third way to eat: mashed garlic with sweet noodle sauce, can also be served with radish strips, etc. Rolling duck meat with lotus leaf cake is also a popular condiment in the early years. Garlic can relieve greasy. Dip the sliced ​​roast duck with garlic and sweet noodle sauce to add a touch of spiciness to the fresh aroma and make it more unique. Many customers especially prefer this condiment.

There are two types of Bianyifang Roast Duck, 1416 is the original flavor, and the other is the flower flavor, since you are here, you must eat the signature. The reason why it is called 1416 is because Bianyifang was founded in the 14th year of Yongle in the Ming Dynasty, that is, in 1416 AD. This is half a roast duck. It looks very small. Half a roast duck does not include side dishes such as pancakes, sauces, green onions, etc., and needs to be purchased additionally. If you buy a whole duck, you will get free side dishes and a duck stand.

Let’s talk about the taste. It’s different from Shanghai. Many restaurants in Shanghai only slice the duck skin to wrap the cake.
