       Nang is the most important daily food of the Uyghur people, and it is also a unique food in the Uyghur food culture.

   

       Nang has a long history in Xinjiang, and its outer skin is golden yellow. It was called "hu cake" and "oven cake" in ancient times.

Nang uses flour as the main raw material, mostly fermented noodles, but a little salt is added instead of alkali.

The Story of the General and Naan

      Jiaohe Station——is a crucial "point" on the Silk Road. In ancient China, the posthouse was a transfer station for people passing official documents and military information or for officials to and from officials. It has a history of more than 3,000 years. up.

       In ancient times, the desert was vast and boundless, and the large and small post stations on the distant roads were the lifeblood of the Silk Road. There used to be a general stationed at the frontier here, who was always stationed at the frontier. 

       His beautiful wife who was far away in Chang'an City, looking forward to it day and night, missed her husband, so she embroidered a delicate sachet and sent it to the general.

       Once the general took some soldiers out on patrol, encountered a sandstorm and lost his way in the desert. When he was about to give up, the general touched the sachet sent by his wife all the way in his arms, and thought that there were still people waiting for him in Chang'an city. Once again, I strengthened my determination, and the last bit of dry food, which is today's "naan", but it was called "hubing" at the time. Finally walked out of the desert and returned to the station.

       When the general wrote a letter to his wife to report his safety, he changed the name of "Hubing" to "Nang" to commemorate the experience of surviving in danger with the support of the sachet sent by his wife.
