During Yalun's trip, he came to Kuitun City, Xinjiang, and was getting closer and closer to the expected Duku Highway. In Kuitun’s summer, it doesn’t get dark until 11 o’clock in the evening, and the days are long and satisfying. In this city, there is a meatball soup restaurant that is very popular with the locals, it is time to try it!

Kuitun City in Xinjiang is only a dozen kilometers away from Dushanzi District, the starting point of the Duku Highway. It should be a good choice to have a night of meatball soup before heading to Duku! This restaurant is near Kuitun City Passenger Station. I arrived at the store after 2:00 pm. I thought it was a bit late, but I found that it happened to be a local meal at this time, and the restaurant was full.

I ordered the main meatball set in the store, 25 yuan a piece, including a bowl of meatball soup, 3 oil tarts, and a small dish of side dishes. Because the weather is very hot, I also ordered a cold cucumber, 15 yuan a serving. The meatballs in Xinjiang are very particular. The soup is a delicious broth made with beef bones. The ingredients in it are rich enough to be seen by the naked eye.

As soon as the meatball soup was on the table, I quickly took a sip of the soup. It was very hot, warming my heart and stomach, but I didn’t feel hot when I drank it in summer, and it was very comfortable. The taste of the soup is mellow, and it is somewhat similar to the taste of mutton soup and haggis soup in Northwest China, maybe the ingredients are similar. The surface layer is chopped green onion, coriander, etc.

Since it is meatball soup, the taste of the main character must be tasted first! This is a meatball with a diameter of 2 cm, which is made of fresh beef, fried first and then boiled in soup. The size is small, but the taste is a bit "rough", not as smooth as the southern meatballs, and the chewing is a little rougher, which may be due to different taste preferences. Another point to mention is that there are only small balls in this bowl of meatball soup, isn't it a bit small?

Although there are not many meatballs, the other ingredients are quite enough, huh? Is this preposterous? No matter what, keep trying! The white square tofu is tender and smooth, and it tastes better after absorbing the soup, especially when it is lying on the spoon and slipping into the mouth with the soup, well, it almost melts in the mouth.

There are vermicelli in the meatball soup, which is very similar to the yak bone soup I ate in Golmud, Qinghai, which I shared with you last time. The long transparent round noodles give this soup a sense of solidity as a staple food, enriching the layers and soothing the taste buds.

There are fresh beef slices in the meatball soup! The texture of the beef is beautiful, and it has a slight sweetness when chewed, not woody, and the fat and thin parts are more flavorful. The quantity is not small, satisfied.

What makes me feel fresh the most is Youtazi! This is a famous food in Xinjiang. It is an excellent partner for meatball soup, and it would be impossible without it. It is named for its shape like a pagoda. The pagoda is white and oily in color, the surface is thin like paper, with many layers, rich in oil but not greasy, fragrant and soft but not sticky. It tasted like Hanamaki at first taste, but then I knew it was not. I enjoy the process of slowly tearing the oil tart, it is soft and fragrant.

The bowl of meatball soup I ate in Kuitun, Xinjiang, is so delicious that I can’t finish it all by myself. In addition to the big ingredients mentioned above, there are actually transparent noodles, spinach, mushrooms, etc., which can be described as a collection of essence. ! It is so refreshing to taste a bowl of hot meatball soup on the road to Xinjiang! After eating and drinking enough, it’s time to set off for “the most beautiful and dangerous road in China”——Duku Highway! Let's look forward to it together!
